I shared a picture of my scramble on Instagram and couldn’t wait to share the recipe over here! I have been on somewhat of a scramble kick and I just made the best one yet. Today I am going to share the recipe, products I used and benefits. Enjoy, and be sure to tag me in your scrambles on Instagram!:)
-As much spinach as you can
-Coconut Oil (Spray or Oil)
-Coconut Yogurt (So Delicious or Homemade if you are fancy;))
-Sunflower Seeds (Living Intentions Greens is what I used)
-(OPT) Wild caught salmon (If you include that in your diet)
Spray pan. Then add spinach and optional salmon. When cooked add coconut yogurt, sauerkraut, sunflower seeds, turmeric and black pepper. Mix together and eat up. It is SO good!
*Spinach: Spinach is leafy green is an excellent source of vitamin K, vitamin A, magnesium, folate, manganese, iron, calcium, vitamin C, vitamin B2, potassium, and vitamin B6. It’s a very good source of protein, phosphorus, vitamin E, zinc, dietary fiber, and copper. Plus, it’s a good source of selenium, niacin, and omega-3 fatty acids. So eat up!
*Turmeric: Turmeric is AMAZING for inflammation and disease prevention, and by combining it with the healthy fats and black pepper it is increasing absorption by a lot.
*Coconut yogurt and sauerkraut: Creates a tang and creaminess to the scramble. Both of these ingredients add probiotics to the scramble which is so good for digestion, acne and a whole host of things.
*Sunflower Seeds: An excellent source of vitamin E, manganese, copper, vitamin B1 and selenium. Plus, if you get Living Intentions brand it includes cold pressed olive oil, it’s sprouted, chlorella and blue green algae.
*(OPT) Salmon: Anti-inflammatory and full of omega 3’s. If you use salmon please watch your sourcing to prevent mercury and farmed salmon.
